The Aubergine cuisine is based on a classical foundation with influences from the East and the West evident in many of our creations. We place an emphasis on lightness and balance to create a sophisticated blend of flavours and textures to excite the senses and pique curiosity.
Our menus are designed to highlight the finest local seasonal ingredients available. Fresh produce is sourced from an extensive network of trusted suppliers and local individual producers to ensure the origin of the ingredients as well as the integrity with which they are produced. Aubergine strives to adhere to sustainable seafood practices and, where possible, uses free-range meat and game and organic produce. Organic vegetables have long been an integral part of our menu.
